Filipino Favorite: Pancit Molo

Molo soup or Pancit molo is a kind of soup dish that is made up of mixture of shrimp, ground pork wrapped in wrapper and shredded chicken meat. This is somewhat similar to Chinese wonton soup but with the touch of Filipino ingredients make it stand out. This dish was said to originate in a place called Molo in Iloilo. However, with its name being pancit molo, surprisingly, there is no Pancit present in the dish.

Ingredients
  1. 2 lbs ground pork
  2. 2 lbs chicken
  3. 1 ½ cups water chestnut or singkamas; minced
  4. 6 T fish sauce
  5. 1 T salt
  6. 1 cup shrimp; chopped, sliced or minced
  7. ½ cup annatto seeds; soaked in ¾ cup water
  8. 1 cup onion; minced
  9. 2 packs wonton wrapper
  10. ½ cup green onions; minced
  11. 4 cloves garlic; minced
  12. ½ T black pepper; ground
  13. 1 pc egg
  14. ¼ cup toasted garlic; for garnishing
  15. 4 T cooking oil
  16. 12 cups water; 8 cups for chicken and 4 cups for the soup
Instructions
  1. Boil the water in a casserole
  2. Put the chicken and let it boil for 60 minutes or until tender
  3. While letting the chicken boil, mix the pork, singkamas, green onions, egg, onions, pepper and salt in a mixing bowl.
  4. Wrap a spoonful of pork mixture in the wonton wrapper
  5. Remove the chicken from the water and let it cool. Set the chicken stock aside
  6. Manually separate the meat and chop it to your desired size
  7. In a separate pan, sauté onions and garlic then add the chicken
  8. Add some fish sauce, annatto water and chicken stock, let it boil
  9. Add in the shrimps
  10. Add in the wrapped ground pork one by one
  11. Add the green onions and toasted garlic
  12. Serve in a serving bowl while hot.
