Making Bibingka Espesyal

Bibingka is among the most loved native delicacies of Filipinos. It is made from ‘galapong‘ or rice flour. In almost all Filipino special occasions, expect that you can find bibingka. Even every Sunday morning after the mass, you can find plenty of Bibingka vendors outside the church.

Cooking bibingka in a traditional way is very unique, however, it is very tiring and time consuming. You should have a clay pot lined with banana leaf, then pour the mixture into it. The ‘bibingka oven’ is used to bake the mixture. This oven is not an electric oven that you could find in your kitchen. It is made from clay and designed especially for cooking bibingka. This oven will be placed between two clay pots with fired ‘uling‘ or charcoals.

Not all of us have this kind of oven and clay pots, so we will try to other alternative. We will use simple cake pans that you can find in your kitchen. Bibingka is usually made from ‘galapong‘ but if you do not have this kind of rice, and you can not find one, then you may use ordinary rice or simply rice four. You can find rice flour everywhere so it would be easy for you. Use the ordinary rice flour instead of the glutinous one, but if you are having a hard time identifying them , remember that the glutinous one is always labeled green while the ordinary one is labeled with red prints.

Now, if you are interested in cooking bibingka, here’s the recipe:

You will need  a mixing bowl, a wooden ladle.

Ingredients:

  • 1 cup water
  • 1 cup rice
  • 1 cup thick coconut milk
  • 2 tbsp melted butter
  • 2 tsp baking powder
  • 3 eggs, beaten
  • 1/2 cup refined sugar

Preparing Bibingka Batter:

  1. Soak the rice into the water overnight.
  2. Drain the water and separate the rice. Use a rice grinder to grind the rice to produce rice flour.
  3. Mix the rice flour with sugar.
  4. Add the melted butter, baking powder, coconut milk and the beaten eggs to the rice flour mixture.
  5. Mix thoroughly.

How to cook:

  •  Prepare the following:
  • a mixing bowl
  • ladle
  • a pair of tongs
  • improvised basin for live coals
  • banana leaves
  • turner for frying or toasting
  • firewood coals
  • measuring cup
  • rice caked mold
  • stove

Ingredients:

  • bibingka batter
  • 1 packet white cheese
  • 4-5 salted eggs
  • grated coconut

Procedure:

  1. Put some banana leaf on the rice cake mold.
  2. Put a cup of rice batter into it.
  3. Put some sliced salted eggs and sprinkle white cheese on top of the batter.
  4. Put the molds with batter into the improvised stove, with live hot coal.
  5. Cook for 10 minutes.
  6. When the bibingka is already cooked, remove from the stove and transfer into a plate.
  7. Serve the bibingka.
